The other day I wanted pineapple pork tacos. Then I wanted green chile pork tacos. I then thought to myself that pork, pineapple AND green chile can go together. A little sweet, savory and spicy? Yes, please. So, I made this slow cooker pineapple green chile pulled pork.
I've been eating it for a week because it's DELICIOUS.
Eating it on tacos.
Eating it in a burrito.
Eating it over rice.
Eating it over salad.
It's so delicious and versatile. I used mild green chiles because of my daughter BUT I say- spice it UP. It's soooo good!
Did I mention is super tasty?
REALLY easy.
Slow Cooker Pineapple Green Chile Pulled Pork

3 lbs pork shoulder
1 can crushed pineapple in pineapple juice (8 oz)
1/2 cup brown sugar
1 can of diced green chiles (7 oz)
1 can of green chile enchilada sauce (15 ounce. I used the mild from Hatch)
3 cloves of garlic- minced
1 tbsp. cumin
salt and pepper
Instructions:
1. Sprinkle pork shoulder with salt and pepper and throw it in your slow cooker and top with can of green chiles..
2. In a bowl, mix together all the ingredients. I'm weird. I like it all mixed well before adding. Pour over pork.
3. Put the lid on your slow cooker and cook on LOW for 6 hours (or until the meat just falls apart).
4. Shred with two forks
5. ENJOY!!!
