Easy Caramel Banana Rice Pudding

One of my favorites is rice pudding.  It's so simple, creamy and delicious.  It's one that everybody has essentially the same recipe but yet each is so different.

Maybe you bake it. Maybe you make it on the stove.  Maybe you use cinnamon, raisins or like me, top with bananas.




Rice pudding is absolutely heavenly.  It's also super easy to make.  There is one ingredient you can not skimp on and that is the milk.

Ready for my easy, peasy rice pudding? 

This is so incredible easy and FAST.  It takes less than 30 minutes from start to finish

Ingredients:

1 tbsp. cornstarch
1/4 tsp salt
1/2 cup of sugar
3 cups of cold milk
2 cups of cold, cooked rice (I use Jasmine)
2 eggs, beaten with 1 tbsp. milk.
Sliced bananas
Caramel sauce.

Directions:

1. In a medium sized pan, add corn starch, sugar and salt.
2. Whisk in milk.
3. Turn on stove to medium.
4. Bring to a slow boil.
5. Add the rice.
6. When the rice and milk mixture begin to boil, slowly add the eggs to the rice mixture and stir constantly.
7. Turn down heat to low and continue to cook until thick and creamy.
8. Serve hot or cool.  Top with sliced bananas and drizzle with caramel sauce.
9.  You can add cinnamon and nutmeg, if you wish!
