Who doesn't love the holiday season? From Halloween to New Year's Day, it's back to back holidays full of celebrations. I just love this entire period or time. Sure, it's crazy busy but it's well worth every second of it.
This season has brought us another year of performing in the Nutcracker. It's extra special to me due to the fact that I thought Emma would never be able to dance. Sure, she is unable to arabesque due to physical limitations but she is able to wear a costume and be a part of a full costume production.
There is no limitations in life except the ones self imposed. It's all about adapting and moving forward proudly.
So with that being said, this holiday season has been absolutely beautiful.
Every Christmas, we make something special for Santa. This year, I am on a total fudge kick. We made this amazing Mint Chocolate Pudding Fudge and oh my gosh............. It's INCREDIBLE. It's so creamy and heavenly. The peppermint isn't overdone. The texture is perfect.
The best part? It's crazy easy to make.
This recipe is from Kraft and you have GOT to make it. Don't limit it to Christmas- make it YEAR ROUND!
Ingredients:

Line 8-inch square pan with foil, with ends of foil extending over sides. Microwave 4 oz. chocolate, 6 Tbsp. butter and water in large microwaveable bowl on HIGH 2 min. or until butter is melted; stir until chocolate is completely melted and mixture is well blended. Add peppermint extract and dry pudding mix; stir 2 min.
Add sugar, 1 cup at a time, stirring after each addition until well blended. Pour into prepared pan; press into even layer with back of spatula.
Microwave remaining butter and chocolate in large microwaveable bowl 1-1/2 min. or until butter is melted; stir until chocolate is completely melted and mixture is well blended. Pour over fudge layer in pan; spread to completely cover bottom layer. Top with remaining ingredients.
Refrigerate 2 hours or until firm. Use foil handles to remove fudge from pan before cutting to serve.
