These super easy and beautiful Red Velvet Valentine cookies are the perfect final touch to any Valentine's Day gift exchange at work or for a sweetheart's gift. They're so easy and nobody will know!
Valentine's Day will be here before you know it! I think Valentine's Day is fun or maybe I just like to have an excuse to make holiday themed snacks, crafts and have fun. Em is super excited and we spent all weekend writing up Valentine's Day cards to give to her friends' class.
At work, we had the option to sign up for a Valentine's Day Secret Valentine gift exchange which I thought was brilliant. It's pretty much like Secret Santa but for Valentine's. The organizer had those who wanted to participate fill out an info sheet so that way the Secret Valentine has an idea of what to get. On top of that, we are having a pot luck.
Valentine's Day potluck and these crazy, easy red velvet valentine cookies are the perfect cookie to add to the potluck table!
These also make for a great gift for neighbors, friends, coworkers and sweethearts alike! They're deceptively easy and crazy beautiful. Right?!
This recipe will yield 16-18 cookies:
INGREDIENTS
1 box Red Velvet cake mix
2 eggs
1/3 cup vegetable oil
1/2 teaspoon baking powder
2/3 cup white chocolate chips
Valentine M&M's
DIRECTIONS
1. Preheat oven to 350° degrees.
2. Line a cookie sheet with parchment paper. This will keep the cookies from spreading into each other.
3. In a mixing bowl, add the cake mix, baking powder, eggs and vegetable oil. Mix until well combined.
4. Stir in the white chocolate chips.
5. Add the Valentine M&M's and stir to distribute through out the cookie dough.
6. Using a tablespoon or cookie dough scoop, transfer the dough onto the baking sheet.
7. Bake at 350 degrees for 10 minutes only. (FYI - If you leave the cookies in longer than 10 minutes, the white chocolate chips begin to brown and the M&M's start to crack)
8. Let the cookies cool for 5 minutes on the cookie sheet before transferring them to a wire rack to completely cool.
9. ENJOY!
