Asian food is seriously my all time favorite food. Thai, Japanese, Indian, Vietnamese, Malaysian, etc.- you name it, I love it. I haven't met one I didn't like. I like Americanized versions and traditional meals.
When I learned that I was allergic to shellfish, I was devastated BUT I learned to start making my own versions of restaurant dishes at home. Home-cooked is SO much better, of course. It makes it easier to control what's in it, prevents cross contamination and of course, I can make it anytime I want!
One of my favorite dishes is Mongolian Chicken and this recipe I made is MUCH better than any I have had in a restaurant, thanks to the extra flavor of pineapple.
The best part about this Pineapple Mongolian Chicken recipe is that it's quick and easy. Also, it uses ingredients that are easy to find at Walmart.
I use Kikkoman® traditionally brewed less sodium soy sauce as my go-to-soy sauce. Kikkoman's less sodium soy sauce is packed full of flavor and makes it easy to cut down on sodium without losing flavor. (Hint: Head to KikkomanUSA.com and find a ton of great gateway recipes to make Asian food at home!)
For my pineapple and juice, I use Dole® Pineapple Tidbits. I have always used Dole thanks to the perfectly sweet and tangy pineapple they can! Pineapple is great because not only is pineapple a tasty fruit- they're low in sodium, rich in vitamin C and naturally cholesterol and fat free!
And because this recipe cooks up really fast, use the original instant rice, Minute® White Rice! You can use Minute Brown Rice, too and it will be a delicious pair with the pineapple Mongolian chicken! Also, it's nice to note that Minute White Rice is gluten free & non-GMO. In just five minutes, you have fluffy and delicious enriched, precooked long grain white rice!
Have everything ready to go and you will have this dish on the table in 20 minutes.
How to make Pineapple Mongolian Chicken

Ingredients:
1 lbs of boneless, skinless chicken breast, cut into bite size pieces
1/2 can (20 oz) Dole Pineapple Tidbits, drained (reserve juice)
2 tbsp vegetable oil
1/3 C cornstarch
1 tsp ginger, minced
1 tbsp garlic, minced
6 tbsp Kikkoman Less Sodium Soy Sauce
1/2 C Chicken Stock
1/4 C Pineapple juice (from reserve)
3 tbsp brown sugar
1 tsp sesame oil
4 green onions, cut to bite size pieces.
Minute White Rice (or brown)
Instructions:
1. In a bowl, mix chicken and cornstarch until evenly coated.
2. Heat oil in large pan or wok over high heat. Once hot, add chicken.
3. Cook until chicken is thoroughly cooked (about 4-5 minutes).
4. Add garlic & ginger- cook for 1-2 minutes. (Start Minute White Rice now. If using brown, start it when you start cooking the chicken)
5. Add soy sauce, chicken stock, pineapple juice, brown sugar and sesame oil. Cook until sauce thickens.
6. Turn off heat and toss in pineapple tidbits (use as much or as little as you wish) and green onions.
7. Serve with rice and enjoy!
Tip: Like spicy? Add Kikkoman Sriracha as a condiment and you'll be extra, EXTRA happy!
You can serve on a plate or rice bowls!
