Have I ever told you that I have a friend who calls me "Beans"? I met her in a college math class.  One day we met to study together in the college cafe and out of nowhere we heard a random lady very excitedly exclaiming "Beans! I have beans!!!!".  I mean, she was VERY excited about her bowl of beans and we haven't stopped giggling about it. The thing is- I love beans and I guess the nickname is quite fitting.  Haha.  


I love chili beans, pinto beans, refried beans, black beans, garbanzo beans, etc.  I haven't met a bean I didn't like.  They're versatile and are an inexpensive way to add a delicious protein.  Breakfast, lunch, or dinner! 

Needless to say, I always have cans of beans in my cabinet. There are four canned goods I ALWAYS have on hand- beans, corn, tomatoes, and coconut milk.  I can ALWAYS come up with something creative with any one of these items.  

I really could write an entire "Ode to Beans" post today but you'll hate me if I do.   Shall we move on to the Mini Taco Bites with Black Bean & Fire Roasted Corn Salsa

These are SOOO easy to make and they're sooooo delicious.

I make the black bean & fire roasted corn salsa ahead of time.  I use Bush's Best Black Beans.  They're my favorite brand of canned beans because they're consistently delicious.  My cupboard is full of a variety of Bush's beans.  (One day, I will share a photo.  You'll scream "BEANS!!!", too!).  So far, I have found that Wal-mart has the best price and selection of Bush's.  I stock up and I am HAPPY!




Black Bean & Fire Roasted Corn Salsa Recipe

1 can (14.75 ounce) of Fire Roasted Corn (if you can't find it, sometimes you can find it frozen or just use regular sweet corn.  Or fire roast your own fresh corn!)
1 can (15 ounce) of Bush's Black Beans
2 Roma tomatoes, diced
5 garlic cloves, minced or crushed
2 jalapenos, diced
1 bunch of cilantro, chopped
Juice of two limes
1/2 red onion, diced
2 TBSP olive oil
Salt to taste

1.  Open and drain the corn and beans in a colander
2.  In a large mixing bowl, toss together the drain beans & corn, and all the ingredients.  
3.  Chill at least an hour but can be made a day ahead. 
4.  Enjoy! 

Mini Taco Bites with Black Bean & Fire Roasted Corn Salsa

1 lbs of ground beef/turkey/your choice
garlic (I use two crushed cloves)
1/2 brown onion, diced
Seasoned salt ( to taste)

Tortilla chips (I like the scoop shaped ones)
Black Bean & Fire Roasted Corn Salsa
Diced avocado (optional)
Sour Cream (optional)
Shredded cheese (optional)

1.  Brown meat with garlic and onion until no longer pink.
2.  Drain meat and add seasoned salt to taste.  

Assembly:

Assemble chips on a platter
Spoon meat, the salsa and optional toppings.

Enjoy!
