I have finally decided to make this again and I am so glad I did. It's held up well and I am still in love with this super easy Mongolian Beef with Mushrooms recipe!
Yes. I am STILL on an Asian food kick. I had such fulfillment with the Garlic Ginger Chicken I made the other day that I am still craving more. This time I wanted Mongolian Beef. I found a copy cat for PF Chang's Mongolian Beef on Damn Delicious and had to try it. I did make some changes but I did follow their recipe in spirit.
- INGREDIENTS:
- 1 pound steak (I bought some pre-sliced stir fry steak. Yeah...I'm a bit lazy)
- 1/4 cup cornstarch
- 1/2 cup vegetable oil
- 2 green onions, thinly sliced (I like a lot. I used six plus I sliced them larger and at an angle. Reserve a handful)
- Sliced Mushrooms
- SAUCE:
- 1/2 cup soy sauce (I used Tamari)
- 1/2 cup brown sugar, packed
- 2 tbsp. of Palm Sugar (I get mine from Season With Spice)
- 1 tbsp. Garlic Ginger Paste (buy it at the store near the jarred garlic)
- 2 tsp. vegetable oil
- 1 tsp. of Sesame Oil
- 1/2 cup of water (or you can use beef broth)
- Garnish:
- Toasted sesame seeds
- Reserved handful of green onions
INSTRUCTIONS:
- In a large bowl, combine steak and cornstarch and coat the steak with the cornstarch.
- In a bowl, whisk together soy sauce, brown sugar, palm sugar, garlic ginger paste, vegetable oil, sesame oil and water. Heat until just slightly thickened.
- Heat 1/2 cup vegetable oil in a large wok. Add beef and mushrooms and fry until browned and cooked through, about 1-2 minutes.
- Transfer to a paper towel-lined plate.
- Get rid of the excess oil.
- Add beef and soy sauce mixture to the saucepan over medium heat and cook until sauce thickens, about 2-3 minutes. Stir in green onions.
- Serve over rice, noodles, whatever you like and garnish with sesame seeds and reserved green onions.
- Like heat? Add some sriracha, sambal oelek or even Korean Chili Flakes and you will have a happy mouth.
