Living in the southwest, we take our southwestern grub serious. We love to mix things up a bit. Maybe a little Tex-Mex or keep it traditional. Either ways, we love our Mexican food! We really, REALLY love Cinco de Mayo around here. I used to work at a Mexican restaurant several years ago that introduced me queso con espinaca (aka Spinach Con Queso). It's so creamy, flavorful and goes with everything.
Eggs? Check.
Chips? Check.
Delimex? Check.
I like to make easy meals and I like them to be delicious. I like to keep Delimex in my freezer to have on hand to throw together quick meals or appetizers. WHO doesn't love tacos, tamales or taquitos? Get friends and family together for game night, celebrate Cinco de Mayo, Taco Tuesdays... it's endless.
Head to Walmart, grab some Delimex from the freezer section and all your ingredients and you got yourself a FIESTA!
Now for the queso con espinaca...
You can make this one of three ways: microwave, stove top or crock pot.
I like doing it in the crockpot because it's just easy to throw it on high for an hour and let the cheese melt to perfection and keep it on warm.
Queso Con Espinaca (aka Spinach Con Queso/Spinach Queso)
**SLOW COOKER**Ingredients:
2 lbs of Queso Blanco, cubed. (You can use white American cheese, queso fresco, etc. They are very soft and mild cheeses)
1 10 oz can of tomatoes and green chilies*, drained
1 4 oz can of diced jalapenos*, drained
1 16 oz bag of chopped frozen spinach*, thawed and drained thoroughly
1 8 oz block of cream cheese, cubed
1/2 C. chopped cilantro
1 tbsp. garlic powder
1 tsp. chili powder
1 small white onion, diced.
Instructions:
1. Place cheese in slow cooker
2. Add onions, tomatoes, jalapenos, tomatoes & green chilies, spinach, garlic powder and chili powder on top of the layer of cheese.
3. Place cubes of cream cheese on top and top with cilantro.
4. Cook on high for 1 hour, stirring at 30 minutes.
5. Once melted thoroughly and it's nice and smooth, you can put on low.
Enjoy with chips, taquitos, whatever!
*You can even use fresh tomatoes, green chilies, jalapenos, and spinach and just add amounts you feel would balance out the chunkiness and to your taste.
This is such an awesome dip and makes a great sauce for mexican dishes! It reheats nicely, may have to add a splash of milk to smooth it out. It's not too spicy, either!
We LOVED it on top of our Delimex Chicken & Cheese flour taquitos.

I'm a tamale loving girl. These beef tamales from Delimex are sooo good and satisfy my cravings. Their taquitos are always the bee's knees. Throw in some chunky gaucamole and scooooooooorrrrrrrrrre!
