With St. Patrick's Day around the corner, these Lucky Charms Cookies pair perfectly with green beer. Okay, I don't know if they will pair well with green beer but... they are magically delicious.
Before I go into these magically delicious Lucky Charms Cookies (which are PERFECT for St. Patrick's day, by the way), I need to go on an obsessive tangent.
I know I am not alone in dealing with mental health issues. I am currently getting care in place now that I have health insurance again BUT I am currently riding on a tidal wave. Major depression strangles my creative juices, motivation and self esteem. Right now, I am riding high on mania. This means that I can become obsessive about things. Right now? Obsessing over LulaRoe clothing. They are soooo comfortable. Their leggings are so soft and comfortable. I have been needing comfy clothes and these fit the bill. And they're cute. Some of their patterns are seriously ... questionable but MOST are adorable.
I just like a thousand Lularoe groups to buy ALL THE LEGGINGS!!!!!!!!!!!!!!!
It's an addiction. You have to be fast and be the first to grab the item. It's ridiculous and adrenaline pumping all at once. It's kinda like ebay. I used to spend HOURS stalking and bidding on Ebay. Sleepless nights and all.
Ya. It's pretty comical except my bank account doesn't appreciate this nonsense. So, I am leaving all the groups and have several packages coming my way.
Thank goodness, counseling starts soon and I will become a more stabilized and knock off the shenanigans and go back to tweeting with celebrities and trying to get them to love me back.... *clears throat*
Soooo... about dem cookies. Amiright? I love Lucky Charms cereal. That's legit. I can eat 10 bowls without flinching (might be why my pants are tight on me.... I digress). Gimme some Lucky Charms and some Jem and I am a happy camper. So why not make them into cookies?
How to make Lucky Charms Cookies
This recipe will yield 16 cookies with a one inch cookie scoop
INGREDIENTS
1 box white cake mix (I used Betty Crocker Super Moist)
1 teaspoon baking powder
1/2 teaspoon vanilla
1/2 cup vegetable oil
2 eggs
Green food gel/coloring
1/2 cup white chocolate chips
Betty Crocker white cookie icing (in a pouch with a decorator tube attached)
1/2 cup Lucky Charms marshmallows
DIRECTIONS
1. Preheat oven to 350 degrees.
2. Line a cookie sheet with parchment paper (this will help keep the cookies uniform and from spreading into each other)
3. In a large mixing bowl, add the dry cake mix, baking powder, eggs, vegetable oil, vanilla and 2 drops of green food coloring.
4. On medium speed, mix with an electric mixer until all of the ingredients are well incorporated. The batter will be thick and light green in color.
5. Fold in the white chocolate chips.
6. Using a one Tablespoon cookie scoop, drop the cookie dough balls onto the parchment lined cookie sheet.
7. Bake at 350 degrees for 10 minutes exactly. Do not overbake.
8. Once removed from the oven, keep the cookies on the cookie sheet for 10 minutes to cool.
9. Transfer to a wire rack to complete the cooling process.
10. Once the cookies are completely cooled, ice the middle of each cookie.
11. Sprinkle a few Lucky Charms marshmallows on top of the icing before it "sets."
12. ENJOY!!
