Has school started for your kids yet? If not, is it soon? Emma went back on August 11th.  It's definitely been a transition for BOTH of us.  It's always so hard getting back into the swing of a change in schedule.  Really, it's been a smooth transition to 6th grade Yay! I have always said that we have been beyond blessed with Emma's school and her teachers.  Living in Phoenix, we have suffered the worst of the real estate bubble burst and our schools (among other services) have faced major budget cuts.  These cuts effect all of us and I am really glad that there are companies out there that find ways to give to our schools! Last Year's Big Fun Field Day at School! 

My daughter's school is so important to me and for her.  Her elementary school really tries to promote tolerance and a bully free zone.  It's also glaringly obvious that the staff cares about the kids.  As the parent of a child in special education, it's very important to me that she can be safe and she's learning.  Every single year, they've all gone above and beyond my expectations.  It's important that the school is able to obtain funding and provide the high quality education and activities that they do and Campbell's Labels for Education program is critical and it's EASY to do! I found a plethora of participating products at Fry's (Kroger family of stores) and shhhh... I found dessert at an end cap.  Movie snack? I think yes! 


With that being said, Campbell's soup can be used for more than a bowl of soup! I found a recipe for brocolli and beef on their website and decided to make it my own! I have to be honest, the idea of using Campbell's tomato soup was so unusual that I had to try it.  It's not anything that I would normally think would be used in a Chinese-style recipe! I will tell you, though... it worked BEAUTIFULLY! Who would have ever thought it?! This recipe also comes together so fast that you can easily make it on a weeknight! It's full of brocolli, mushrooms and beef.  The sauce is bursting with so much flavor!

This amazing Beef and Broccoli recipe is inspired by Campbell's Soup's recipe

Easy Weeknight Beef and Broccoli

Printable version

1 tbsp. vegetable oil
1 lb. sirloin steak cut into pieces (I diced it but you can cut it into strips or however you like!)

Sauce:
1 can of Campbell's Condensed Tomato soup (the 10 3/4 ounce size)
1/4 cup of soy sauce
3 tbsp. apple cider vinegar
1 tbsp. minced garlic (or use ground!)
1 tsp. minced ginger
1 tbsp. hoisin sauce
1 tsp. sesame oil
1 tbsp. sambal oelek (garlic chili paste.  You can skip it or use it as a condiment if you have family members who don't like spicy foods!)

Vegetables:
3 cups frozen broccoli florets (or fresh is excellent, too!)
1 lb. sliced mushrooms
1/2 onion, diced.

Directions:

1.  Mix sauce ingredients and set aside.
2.  Heat oil in skillet over medium heat and add steak and onions and stir fry until well cooked.
3.  Add sauce and mushrooms and heat to just bubbling. (if using fresh broccoli, add it now)
4.  If using frozen broccoli, add it now and cool until tender.

Serve over rice or like I did, noodles! I love noodles! I cooked fettuccine and tossed it with sesame oil and served.

Guys.

It was good.

Seriously good.  This is going in the regular meal cycle!
