Yesterday was Mother's Day! I hope you had a fantastic day (if you're a momma of human or fur babies!). Our weekend was really good. For the first time in the history of ever, I didn't have a full load of stuff to do over the weekend and that was nice. I also didn't want to do a ton load of cooking, I just wanted to make super yummy chicken recipes for two since it is just Emma and I. It's really starting to heat up here (it's going to be in the triple digits here soon! Noooooo!) so I made these really delicious and easy grilled chicken wraps with peanut coconut curry dressing using Tyson Grilled and Ready Sweet Asian chicken thigh fillets that I found at my local Walmart in the frozen food section.
Getting the tickets is really easy! The instructions are here but buy the participating chicken (the complete list is also on the same website) in a single transaction at Walmart, take a picture of your entire receipt and email it. You receive an email back with the code to redeem online and BAM! You have free tickets! I am super excited for Emma and I to go see Blended together.
They heat up to nicely, they remain juicy (as you can see!) and maintain a fantastic texture! No rubber chicken!
Easy Grilled Chicken Wraps with Peanut Coconut Curry Dressing

Ingredients:
Tyson Grilled and Ready Chicken, sliced. (the Sweet Asian chicken thigh fillets are excellent!) Salad (you can use broccoli slaw, I used BBQ Chopped Salad mix that has chopped romaine, cabbage, shredded carrots, shredded broccoli and added additional shredded carrots. You can add anything your heart desires like cucumbers, onions, etc.). Chopped cilantro Sliced green onions Sriracha, Sambal Oelek or jalapenos- if you want spicy. Large burrito sized tortillas Peanut Coconut Curry Dressing 1/3 c. Peanut Butter (smooth or crunchy- your choice!) 2 tbsp. Honey 1 tbsp. of Coconut Palm sugar (if you can’t find it, substitute for brown sugar) 3 tbsp. Tamari Soy Sauce 2 tbsp. Rice Vinegar Lime juice from one small lime 1 tbsp. of lemongrass and ginger powder (you can use fresh!) 2 tbsp. of curry powder 2 tbsp. of garlic powder (you can use fresh!) 1 can of coconut milk. 1 tsp of sesame oil To make the peanut the dressing: 1. Combine all ingredients except sesame oil in a small sauce pan over low heat.
2. Stir constantly until the peanut butter is completely melted and all the ingredients are blended.
3. Remove from heat.
4. Add the sesame oil and pour into a container and put into the refrigerator.
You can make this a day ahead of time (even better! The flavors really marry quite well overnight!)
Assemble the wraps! Lay out your tortilla Add your salad. Add chicken Drizzle the Peanut Coconut Curry dressing over the chicken Add your additional toppings- cilantro, green onions, chilies, etc. Fold in the ends first, roll up, and then cut in half and you have your delicious wraps. |
I hope you enjoy this BLENDED kind of recipe- a blend of ease, convenient, tastiness, healthiness and a tad bit of fusion using Asian flavors wrapped up in a burrito! This came out fantastic! Of course, I didn't use any any hot sauce on Emma's but she loved it. It was perfect for the two of us and completely family friendly. Emma loves chicken and she loves peanut butter. I am trying hard to get her to eat more veggies, especially roughage, so this was perfect! Added a side of grapes and it worked out great.
