Yesterday was Mother's Day! I hope you had a fantastic day (if you're a momma of human or fur babies!).  Our weekend was really good.  For the first time in the history of ever, I didn't have a full load of stuff to do over the weekend and that was nice.  I also didn't want to do a ton load of cooking, I just wanted to make super yummy chicken recipes for two since it is just Emma and I.  It's really starting to heat up here (it's going to be in the triple digits here soon! Noooooo!) so I made these really delicious and easy grilled chicken wraps with peanut coconut curry dressing using Tyson Grilled and Ready Sweet Asian chicken thigh fillets that I found at my local Walmart in the frozen food section.

Oh and speaking of Tyson Grilled & Ready Chicken, if you buy TWO bags of specially marked (see picture below) chicken, email or text the picture of your receipt to the email on the back of the sticker, you can get TWO free tickets to see the movie "Blended" starring Adam Sandler and Drew Barrymore.  Have you seen the previews yet? You must and you can go see it here.  Drew Barrymore is one of my favorite actresses and I am so excited to see her paired up with Adam Sandler again (Loved them in 50 First Dates).  Also, as a single mom, I can really connect with "Blended" as it is about two single parents who go on a disastrous first date, end up stuck in the same suite on an African safari and it looks freaking hilarious.  I laughed when I was watching the previews.  I totally can't wait to watch it!

Getting the tickets is really easy! The instructions are here but buy the participating chicken (the complete list is also on the same website) in a single transaction at Walmart, take a picture of your entire receipt and email it.  You receive an email back with the code to redeem online and BAM! You have free tickets! I am super excited  for Emma and I to go see Blended together.

I love a good salad.  I am a chopped salad kind of girl but I also like a robust salad- I want it to be a meal all in one and that is why this recipe works so well!  Also, I live where it gets hot.  Like entirely too hot in the summer so I don't want to heat up the kitchen plus I live in an apartment and that means no grills for me! Tyson's Grilled and Ready chicken is perfect to create an easy, family friendly meal.  They're grilled and if you buy a flavored one (like I did), it's already glazed.  You can heat them in the oven or microwave them.

They heat up to nicely, they remain juicy (as you can see!) and maintain a fantastic texture! No rubber chicken!

Ingredients:
Tyson Grilled and Ready Chicken, sliced. (the Sweet Asian chicken thigh fillets are excellent!)
Salad (you can use broccoli slaw, I used BBQ Chopped Salad mix that has chopped romaine, cabbage, shredded carrots, shredded broccoli and added additional shredded carrots.  You can add anything your heart desires like cucumbers, onions, etc.).
Chopped cilantro
Sliced green onions
Sriracha, Sambal Oelek or jalapenos- if you want spicy.
Large burrito sized tortillas

Peanut Coconut Curry Dressing
1/3 c. Peanut Butter (smooth or crunchy- your choice!)
                2 tbsp. Honey
1 tbsp. of Coconut Palm sugar (if you can’t find it, substitute for brown sugar)
                3 tbsp. Tamari Soy Sauce
                2 tbsp. Rice Vinegar
Lime juice from one small lime
1 tbsp. of lemongrass and ginger powder (you can use fresh!)
                2 tbsp. of curry powder
2 tbsp. of garlic powder (you can use fresh!)
                1 can of coconut milk.
                1 tsp of sesame oil

To make the peanut the dressing:
                1.  Combine all ingredients except sesame oil in a small sauce pan over low heat.
    2.  Stir constantly until the peanut butter is completely melted and all the ingredients are blended.
    3.  Remove from heat.
    4.  Add the sesame oil and pour into a container and put into the refrigerator.
You can make this a day ahead of time (even better! The flavors really marry quite well overnight!)

Assemble the wraps!

I hope you enjoy this BLENDED kind of recipe- a blend of ease, convenient, tastiness, healthiness and a tad bit of fusion using Asian flavors wrapped up in a burrito! This came out fantastic! Of course, I didn't use any any hot sauce on Emma's but she loved it.  It was perfect for the two of us and completely family friendly.  Emma loves chicken and she loves peanut butter.  I am trying hard to get her to eat more veggies, especially roughage, so this was perfect! Added a side of grapes and it worked out great.

Be sure to also visit Tyson's website for recipes inspired by the movie Blended.

Do you plan to go see Blended when it is released on May 23rd??  If you do, definitely pick up some Tyson Grilled and Ready chicken in the freezer section at Walmart so you can get FREE TICKETS.  Did I mention free? Double boom.  Good chicken, heat and eat chicken and movie tickets? That's what I call a perfect BLENDED match :)

Have a gorgeous day!
